Gellan Gum, High Acyl
|
產品型號:3012-H 商品規格: |
|
For soft and elastic gels.
Purity: >99%
Gel Strength: 450-650g/cm2
Solubility (Color), 10mg/mL in ddH2O: Colorless to Faint Yellow
Solubility (Turbidity), 10mg/mL in ddH2O: Clear to Very Hazy
Gellan gum is a water-soluble anionic polysaccharide produced by the bacterium Sphingomonas elodea
Gellan gum products are generally put into two categories, low acyl and high acyl depending on number of acetate groups attached to the polymer. The low acyl gellan gum products form firm, non-elastic, brittle gels, the high acyl gellan gum forms soft and elastic gels.
The high acyl variety contains many acetate groups, forming a soft, elastic gel. For stronger gels, the low acyl gellan gum is preferred.
